Bristol Restaurant:
THE NATURAL TASTE OF CHILEAN FLAVORS
It is know for it's unique flavors, unforgettable
smells, and unbeatable service. Those who have enjoyed a meal here,
always come back for more and can't stop talking about it. It's
name: Bristol restaurant of Plaza San Francisco Hotel.
Anyone who associates the name Bristol with the
largest city of south west England has not tasted the best of the
renewed Chilean cuisine. Bristol Restaurant of Plaza San Francisco
Hotel speaks for itself and it's name is synonymous with excellent
service and quality.
This recognition, earned over a course of 13 years
of work, was born from a huge project by Guillermo Rodríguez
and his crew, who have won international and national awards such
as the three gold medals in the contest of the Chilean Gastronomy
Association, ACHIGA, in the following categories: Gastronomy
(1997), Chilean Cuisine (1997), and Most Complete Menu (1998). The
same year they received the Award for "Excellence in Service",
granted by the Chilean Gastronomical Analysts Association
in recognition of Alejandro Farías and his staff, who demonstrate
the ideal attitude and effort needed to provide superb services
to our clients. Bristol Restaurant was elected for the best "Traditional
Restaurant" award, given by Lobby magazine in 1999. But
it wasn't until 2002 that we achieved all of our recognition: we
won 4 out of the 5 categories evaluated by a panel of 20 experts
from Wiken magazine of the El Mercurio newspaper: Best Restaurant,
Best Menu, Best Service and Best Wine List.

Recognized at an international level as well, Bristol
received the Gold Medal in the Alto Sham competition (2000)
for expert chefs and was the only Chilean restaurant prized by the
prestigious Fodor's travel guide in the United States. Other
distinctions include; our Catering for Presidents Summit of America
and all the banquets offered by the Presidency of Chile to foreign
visitors. All of these awards and distinctions are based on excellent
team work lead by Guillermo Rodríguez. He is not only recognized
as a leader of the Renewed Chilean Cuisine movement , but also as
president of the Chilean Chapter of "Les Toques Blanches",
the prestigious French chef's association, which broadens his knowledge
in the gastronomical world.

Thirteen years of working at the Bristol restaurant
gives you a lot of cooking experience?
"Working at the restaurant of a hotel is a unique experience.
We have the liberty to design our cuisine and therefore, give the
identity we want to the restaurant. After 13 years at Plaza San
Francisco Hotel, I see Bristol restaurant as a finished project,
that has achieved my expectations. If we talk chefs language, I
would say that it is a recipe that succeeded by trial and error".
And with a more global vision, how do you see
the gastronomical hotel business in Santiago and around the world?
"Some time ago, this business didn't have a very good profile.
Everyone thought the hotel restaurants were expensive and massive,
which meant low quality. Never the less, this idea changed when
the people who worked in these areas prepared themselves. These
days, the hotel restaurants have hi tech machines, specialized personal
and a group of skilled chefs that have traveled around the world.
This gave them the opportunity to recognize new culinary tendencies
and open their doors to a variety of gastronomical options. Just
look at what we offered today on the Bristol menu: wild boar, ostrich,
lamb, etc".
Talking about options and tendencies, what can
we expect of 2003 gastronomy?
"This year is going to be a sequence of 2002. Natural cooking
and organic products prevail. People are looking to eat in a healthier
way; orchard fruits and vegetables, leaving aside all the genetically
modified products. 2003 gastronomy is simple, and has a huge force
centered on natural flavors. This is the key for this year
and you are all invited to taste it, in our restaurant, of course".
